Never did cook that Easter Dinner. Except, I did try out a Sweet Potato Casserole & Roasted Yukon Gold Potatoes w/ Bacon & Parmesan Cheese (pics under cut).

Sweet Potato Casserole was just O K - I have done better. Probably would have tasted better if I had totally covered it with Marshmallows. And, the Roasted Potatoes - could
have done without the Parmesan Cheese. Plus, I burned them! Think I'm going to stick with my original recipe of Fingerling Potatoes w/ Veg. & Bacon.

Earlier today was rainy & cloudy, so, did not go to the Mall as originally planned. Decided to try my hand at a couple of recipes that look easy on paper (they all look easy on paper ); Cranberry Apricot Almond Bread (in Bread Mach.) & Pecan Pie Muffins. I must say, the Bread is not looking good at the moment - probably should have put it on the dark crust setting. We shall see. And, the Pecan Pie Muffins - only 5 ingredients - about to go now & bake them. Should be easy. Back later with pictures. Or, not.

First, I have to sign this e-mail letter & include my own personal notes, to my Senator who is about to side with the Republicans & sign the Corker Bill (re Iran nuclear negotiations). What an odious bunch!
