My Sunday Dinner Menu was supposed to consist of: Baby Back Pork Ribs, Roasted Potatoes with Bacon, Red Onions & Sage, Roasted Sweet Potatoes with Cinnamon Pecan Crunch & Corn Pudding. Not a green vegetable in sight. Well, the Sweet Potatoes & Corn Pudding were cooked on Sunday. However, just finished roasting the potatoes with bacon, etc. I must say, although I used too much bacon grease (I halved the recipe) & too much sage, this is the only one I am fully satisfied with. Very tasty.

Where are the Baby Back Pork Ribs? Never cooked them. In fact, I gave them away; 3 racks of ribs to one sister on Sunday (along with the rest of the fudge from Thursday) & the 4th rack of ribs to another sister this morning (along with a Temptations Bake Set w/ Carriers & Cookie Jar - QVC addiction is taking hold, again). I know Pork is known as "the other white meat", but, it looked awfully red in the packages. And, just the thought of my hands touching that meat, made me nauseous. Decided if I have a craving for Baby Back Ribs (which I've not had in 40 years!), I will order online from the local Applebees Restaurant - my sister said she would be happy to pick them up for me.

Reason why I had 4 racks of ribs (recipe called for 3)? I decided 3 was too many, I would only buy 2 racks. Get to the Grocery Store, they were on sale - buy one, get one free. Great. Normal person would get just the 2 as intended & be happy that they only had to pay for one item. But, no - my thought process was "I was going to buy 2 anyway, now I have 2 extra for free". My brain does not function once I step over the threshold of a Grocery Store.
